Red tea from Fujian, China・April 2024・松溪紅・Organic

Song Red is our own creation, blended from several different cultivars to create a sweetly balanced, aromatic tea with notes of honeydew, maple syrup, and orange.

The tea comes from an organic garden located near Songxi Township, Fujian Province. The natural biome of this garden is particularly diverse, with rows of tea plants interspersed between trees and bushes. On particularly warm or sunny days, the natural contours of the garden shade the tea plants, and in the late afternoons, mist and fog blanket the hills.

The garden boasts a range of tea cultivars, five of which were used to craft this tea. The base tea is a cai cha - a small leaf cultivar that lends sweetness to the brew. The other four are traditional oolong cultivars, fully oxidized in the style of red teas: jin mudan (gold peony), huang guanyin (yellow goddess of mercy), jin guanyin (gold goddess of mercy), and meizhan. All four oolong cultivars contribute to the tea’s fruit and floral notes. Each tea was picked in mid-April 2024.

The result is a tea that is bright, aromatic, and perfectly balanced between sweet and floral.

Brew: 5 grams・150 ml・205° F・2 min

This tea takes a little longer steep to develop its full, floral potential but will maintain sweetness in spite of over-extraction. We suggest starting with our brew parameters, and adding to steep time depending on preference.
