Song’s collection features both fresh and aged matcha directly sourced from Japan.

Aged matcha is time smoothed and lacking the sharp angles and tannins of new leaves. Quickly steamed after picking to halt oxidation, this tea is stored and aged as tencha - small flakes that are then ground in traditional stone mills to produce matcha.
