Four years ago, we released a high elevation Shuixian oolong to The Song Collection, a sweet, toasty tea harvested from 30-year-old tea trees grown at 2200 meters, in Lishan Taiwan. We continued to carry this tea through three sourcing seasons, before yielding the slot to new discoveries.

This spring, while cupping a Red Water Tieguanyin from this same tea maker, we discovered a small batch of red tea made from those very Shuixian leaves we’d known and loved. Crafted in 2009, this red take on these tea leaves contained all the depth and complexity of the oolong we had so enjoyed, with the rich, added transformation of nearly a decade of careful storage.

This garden’s tea trees are loosely dispersed across a green hillside, towering above a lush carpet of ferns. The garden’s high elevation slows the development of the leaf, adding sweetness to the tea, while the root structure of these aged trees furrow far down into the nutrient-rich soil, adding depth to the tea. This unique combination produces tea leaves that are rich in anti-oxidant catechins and sugars- the foundational building blocks of flavor, texture, and aroma.

Ten years on, careful aging has added extra dimension to this Shuixian Red: creating a malted, stout-like texture, and introducing notes of dried fruit and plums.
