Green tea from Fujian, China・April 2017・小葉香・Organic
Hand-picked the third week of April 2017, Fragrant Leaf is crafted from a small leaf cultivar indigenous to northern Fujian. Locals use this variety to craft their everyday tea, termed “xiang cha” or fragrant tea.
Our Fragrant Leaf is first shade-withered, then drum roasted at high fire to prevent oxidation before a final low fire roast. The resulting tea is unassumingly beautiful, with thin strands of dark green leaves that brighten and unravel when steeped.
The source garden lies southeast of Mt. Taimu in Fuding County of Northern Fujian province. We commission this tea annually, based on the producer’s knowledge, care, and experience in organic tea production.
This is a sublimely rich green tea, redolent with the scent of sweet grass and rich honey. The intensity of the aroma belies the clarity and clean sweetness of the brew. This tea is crisp and clean, with a dry finish.
Brew: 4 grams・150 ml・175° F・1 min
This is an easy green to brew as long as water temperature remained below 175F. If you prefer a richer tea, we suggest maintaining steep temperature at 175F, but adding steep time in 30 second increments.
