2019 marks our first year offering this oolong from Taiwan’s Dragon Phoenix Gorge. The cooler temperatures and mist-shrouded gardens of this region produce tea with clarity, aromatics, and texture.
Dragon Phoenix Tender Heart is produced by a small farm operated by the Zhang family. Two generations work together during the harvest, the older generation influencing the younger to produce rich, bold teas using traditional methods. Our batch of oolong was crafted using traditional “cloth globes”, a process of rolling oolongs that takes more time than modern techniques, but that develops more flavor and character.
The Zhang family garden is located at 1600m on Shan Lin Xi in the Dragon Phoenix Gorge. The tea is crafted from a variety called ruan zhi, or soft stem. Ruan zhi is an older variant of the qing xin (clear heart) cultivar. Though difficult to grow than a Clear Heart, ruan zhi delivers a more persistent and structured finish.
This tea was airshipped to us almost immediately after production. We then finished the maocha in-house by lightly baking it at our studio in San Francisco to remove excess moisture, and further concentrate the tea’s floral notes.

This tea accommodates a range of brew styles. Our brewing guide highlights this tea’s long, structured finish. Decreasing steep time will result in a sweeter, milder tea.
